This bill introduces a new section to RSA 143-A, specifically allowing meat producer-distributors with a license to sell USDA inspected meat to produce and sell dehydrated meat without requiring a homestead food license. The new section, 143-A:5-b, outlines specific conditions that must be met for the production and sale of dehydrated meat, including sanitary requirements, proper handling and storage of meat, and the use of appropriate equipment. Key provisions include ensuring that the meat is dehydrated at a temperature of at least 130 to 140 degrees Fahrenheit, that it is vacuum sealed with a 30-day expiration date, and that it is labeled with the producer's contact information and a warning about the risks of foodborne illness.
Additionally, the bill mandates that dehydrated meat products can only be sold directly to consumers at the producer's farm, farm stand, or farmers' market. It also requires that a sign be displayed at the point of sale with similar information as the product label. The bill does not delete any existing legal language but adds these new provisions to enhance food safety and consumer awareness regarding dehydrated meat products. The act is set to take effect 60 days after its passage.
